Quick & Tasty 2 Minute Lemonade

It was a last minute lunch and I wanted to serve something special. You know how it feels when someone calls and says they will be over in 30 minutes. You want to be a thoughtful host/hostess and offer something extra – but 30 minutes is not a lot of time to tidy up and prep for a visitor!

When those moments spring up like a bunny hopping across the lawn, turn to your trusty Vitamix!

The Vitamix Aer Disc container is perfect for whipping up drinks: hot, cold, or alcoholic. In this instance, I wanted something light and refreshing for the impromptu lunch date. In a matter of only two minutes I had a garnished glass of ice cold lemonade waiting on the table for my guest.

I used the side of the container to measure the water. Bonus: no need to dirty another dish! I sliced up a lemon, poured in some cane sugar (you could also use honey), and fill the container with a measuring cup of ice.

I whizzed the machine to life for only 30 seconds. After pouring the liquid through a fine mesh strainer to catch the lemon rind, seeds, and pulp, I was left with two glasses of gleaming lemonade!

For a fancy feel, garnish the glass with a slice of lemon or strawberry. If you want to be extra fun, dip the rim of each glass in water and then into colored sugar. Kids find this especially exciting, for the vibrant color and because they are literally allowed to eat sugar.

The next time you find yourself in a tight spot with little time, make a glass of ice cold lemonade!
