Black Bean Soup

This spicy black bean soup is perfect to help heat you up after a cold day. It’s simple to make and it is full of vitamins and nutrients to help keep you healthy.


Black bean soup
  • Black beans – 4 cups
  • Diced tomatoes – 2 cups
  • Vegetable stock – 2 cups
  • Chopped onions – 1 cup
  • Jalapeno – 1
  • Garlic, minced – 1 clove
  • Cumin – 2 tsp
  • Red pepper flakes – 1 tsp
  • Cilantro – 1 bunch
  • Sour cream – For garnish


  1. Combine 3 cups of the black beans with 1 cups of the diced tomatoes and the vegetable stock in a large pot
  2. Heat over medium heat until it begins to simmer
  3. Add onions, jalapeno, garlic, cumin, and red pepper flakes
  4. Continue to simmer for 5 minutes to allow flavors to combine
  5. Remove from heat and transfer to blender, working in batches if necessary
  6. Blend on low for 30-45 seconds to roughly combine mixture
  7. Return blended mixture to pot and add remaining beans and tomatoes
  8. Continue to simmer for 20-30 minutes without lid to allow mixture to thicken
  9. Spoon into bowl and garish with cilantro and sour cream if desired
