This spicy black bean soup is perfect to help heat you up after a cold day. It’s simple to make and it is full of vitamins and nutrients to help keep you healthy.
Ingredients
- Black beans – 4 cups
- Diced tomatoes – 2 cups
- Vegetable stock – 2 cups
- Chopped onions – 1 cup
- Jalapeno – 1
- Garlic, minced – 1 clove
- Cumin – 2 tsp
- Red pepper flakes – 1 tsp
- Cilantro – 1 bunch
- Sour cream – For garnish
Instructions
- Combine 3 cups of the black beans with 1 cups of the diced tomatoes and the vegetable stock in a large pot
- Heat over medium heat until it begins to simmer
- Add onions, jalapeno, garlic, cumin, and red pepper flakes
- Continue to simmer for 5 minutes to allow flavors to combine
- Remove from heat and transfer to blender, working in batches if necessary
- Blend on low for 30-45 seconds to roughly combine mixture
- Return blended mixture to pot and add remaining beans and tomatoes
- Continue to simmer for 20-30 minutes without lid to allow mixture to thicken
- Spoon into bowl and garish with cilantro and sour cream if desired
