Blueberry Balsamic Vinaigrette

We go through salad kicks, where we eat it every single day for an entire week. But then we get tired of it and take a week or two off. Is your family the same way?

Last week, we had salad every afternoon for lunch. There was a little bit of lettuce left, but I honestly wasn’t in the mood for a salad. However, I didn’t want to waste food! (Do you ever feel that way, too?) So I decided to make a brand new salad dressing with different flavors than usual.

I’ve made plenty of vinaigrettes and creamy dressings. But I’ve never crafted a dressing composed of blueberries. So I experimented, and was so pleased with the results!

First, I dumped some oil into my Vitamix Aer Disc container. That’s always the base ingredient for a good salad dressing. Next, I added some fresh blueberries, since that was like my “secret ingredient.” 

Hmm…what next? Vinegar usually pairs well in a dressing, so in went some balsamic. Oh but what about a splash of honey to pull out the fruity flavor of the blueberries? Perfect!

I whirred my Vitamix to life and watched the blueberries smash into the oil and vinegar. I opened the lid and noticed that not all of the blueberries were fully crushed. That’s okay! It adds texture, but the blueberry flavor is still potent.

I drizzled the dark, thick dressing over a bed of spinach and enjoyed this new twist on a classic oil and vinegar salad dressing.

Blueberry Balsamic Vinaigrette

A thick dressing with fresh blueberries and flavorful balsamic vinegar.

Cook Time: 1 minute
Total Time: 6 minutes

Ingredients

  • ½ cup vegetable oil
  • ¼ cup olive oil
  • ½ cup fresh blueberries (not frozen)
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • Salt to taste

Instructions

    Place all ingredients into the Vitamix Aer Disc container. Run on high for 30 seconds.

    Drizzle over salad and enjoy!

Notes

It’s okay if some of the blueberries remain whole. This adds texture, but the pulverized blueberries will still add the flavor you’re looking for!
