Clean Caesar Salad Dressing

Salad. It can be an incredibly boring bowl of lettuce, or a dish bursting with colorful add-ins, intense flavors, and satisfying ingredients. What morphs a boring bowl of lettuce into a satisfying meal? One of the key factors is a palatable salad dressing.

If you’re a fan of creamy dressings, you’ll love this clean Caesar dressing. Nix the mayonnaise or yogurt, and sub with hemp hearts, a protein-rich superfood.

Like traditional Caesar dressing, this recipe calls for garlic, lemon juice, balsamic vinegar, and olive oil. Worcestershire and Dijon mustard add a hint of flavor variety. Hemp hearts and Parmesan cheese thicken the mixture and bring the mixture full circle.

The best part? Dump everything into your high-powered blender, blend for 30 seconds, and that’s it. Insider tip: use the measurements on the side of the blender cup to measure the olive oil and lemon juice instead of dirting another cup, then add in the remaining ingredients to the blender.

What else transforms a boring salad into a satisfying meal? The toppings. Drizzle your homemade dressing over your lettuce. Sprinkle with additional Parmesan cheese if desired. Grilled chicken or chickpea croutons add protein and even more flavor. Sliced carrots, diced cucumbers, red onion, thinly sliced radishes, bread croutons, sliced almonds, or sun dried tomatoes make excellent toppings, too.
