Effortless Eggnog

Eggnog is a classic Christmas drink. You either adore it or absolutely can’t stand it. If you fall toward the side of adoration, you’ll love it even more once you realize how simple this recipe can be. 

Eggnog is the descendant of a medieval ale-like beverage made by the British. It’s morphed over time, especially once the early American settlers had an abundance of chickens and eggs. 

Eggnog has essentially become a spiced milk and egg drink. Supermarkets sell a sugary brand, but this homemade recipe isn’t quite as sweet – although I beg to suggest that it’s even tastier!

First, let’s talk about raw eggs. Yes, they may carry salmonella. Which is why you want to use high quality, organic eggs that have been pasteurized. Can’t find pasteurized eggs in the store? No problem. You can easily make them at home in less than 5 minutes! 

Place the eggs in water. Bring to exactly 138-142°F and maintain that temperature for 3-4 minutes. This reduces the potential bacteria without actually cooking the eggs. If the temperature drops, the eggs have not been pasteurized. If the temperature rises, you have started to cook the egg. Use a digital thermometer to keep the temperature stable.  

Dump 4 pasteurized egg yolks, heavy cream, milk, honey, maple syrup, vanilla extract, nutmeg, cloves, and salt into the Vitamix Aer Disc container. Blend, chill, enjoy.

Ditch the supermarket brands to limit your sugar. But don’t slave over the stove simmering a pot of Eggnog. Let your Vitamix do the work for you!

Christmas is busy enough; don’t slave away your time over a pot of Eggnog. Instead, whip up a batch in your Vitamix Aer Disc Container! Dump in the ingredients, blend, and chill before serving.

Prep Time: 10 minutes
Cook Time: 2 minutes
Total Time: 12 minutes

Ingredients

  • ¾ cup heavy cream
  • ¼ cup whole milk
  • 4 pastured egg yolks (see notes below to pasteurize)
  • 2 tsp honey
  • 2 tsp maple syrup
  • ½ tsp vanilla extract
  • ⅛ tsp ground nutmeg
  • ⅛ tsp ground cloves
  • ⅛ tsp salt
  • Optional 2oz amaretto, brandy, rum, or cognac

Instructions

  1. Place all ingredients in Vitamix Aer Disc container. 
  2. Gradually increase speed to medium and blend for 15-30 seconds.
  3. Gradually increase speed to high and blend for an additional 15-30 seconds.
  4. Chill in the fridge until ready to serve. 
  5. If desired, top with fresh whipped cream and garnish with a sprinkle of nutmeg or cloves.

Notes

Add 2oz amaretto, brandy, rum, or cognac for Spiked Effortless Eggnog
