Mediterranean Dressing

One of my favorite things about summer is the fresh salads. Romain or purple kale and everything in between. The abundant lettuce makes for the perfectly tender salad, for a small lunch or as a side dish for dinner.

I transitioned away from store bought salad dressings once I got my Vitamix Aer Disc container. It couldn’t be easier to make any flavor of salad dressing to suit my mood. Italian Pesto or crisp lemon or creamy caesar. But lately the Mediterranean herbs have grabbed the attention of my senses.

Fresh rosemary, basil, and oregano are in season, straight from the garden. I bundle them up and give a rough chop until they are as small as dried herbs. If it’s winter, don’t hesitate to use dry herbs, although you may need to use a little bit more to produce the flavor you’re after. 

Truthfully, it takes only a minute to measure and sprinkle these ingredients into the Vitamix Aer Disc container. The powerful and effective disc emulsifies the oil and vinegar together while also gently incorporating the herbs. The handy spout makes it easy to pour directly over my fresh salad.

Helpful tip: Double this recipe and store the extras in a jar in your refrigerator. The next time you have salad, you won’t need to make a fresh batch. Better yet, make a different dressing each time you have salad over the next week; make a double or triple batch of your dressing so you can grow your “collection” in your fridge!

Mediterranean Dressing

A classic salad dressing that exudes the traditional Mediterranean flavors.

  • ¾ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 2 tsp garlic powder
  • 2 tsp oregano
  • 2 tsp basil
  • 1 tsp rosemary
  • 1 ½ tsp pepper
  • 1 ½ tsp salt
  • 1 ½ tsp onion powder
  • 1 ½ tsp mustard
  1. Add all ingredients to the Vitamix Aer Disc container.
  2. Blend on medium for 30-60 seconds, until all ingredients are incorporated.
  3. Store in a jar in the fridge.
