Orange Kale Smoothie

Do you remember those orange popsicles from childhood, the ones that had an orange layer on the outside and a creamy layer on the inside? I was craving one of those, minus the artificial colors and spoonfuls of sugar.

“Could I make a smoothie that tastes kinda like that?” I thought. Why not give it a try!

Of course, I grabbed the orange juice and some frozen tropical fruit. Bananas make every smoothie thick, so that needed to be included as well.

Yogurt and kefir are creamy, so heap a few spoonfuls of that in there. In fact, naturally flax seeds thicken a smoothie, so they will be a good addition to the yogurt and kefir.

Carrots are orange, and this is supposed to be an orange smoothie, so I peeled a carrot and tossed that in my Vitamix as well. Veggies are never a bad choice!

And, because I wanted to be extra healthy, I dumped a handful of kale in there.

I whirred the blender to life and watched the smoothie turn green. 

“Well…maybe it will taste like orange but look green” I thought. And I was right! It was a balanced blend of creamy and tropical. In my opinion, I’ll take a nutritious smoothie over a fake orange popsicle. How about you?

Orange Kale Smoothie

A citrus green smoothie that tastes like a tropical paradise!

Ingredients

  • ½ cup orange juice
  • ¼ cup yogurt or kefir
  • 2 Tbsp flax seeds
  • ½ cup mixed frozen fruit (tropical blend is best with this recipe, but any variety will work)
  • ½ banana
  • 1 large carrot, peeled
  • 1 cup of kale leaves

Instructions

  1. Place all ingredients in Vitamix and blend on high for 30 seconds until all ingredients are blended.
