Peanut Butter Banana Ice Cream

You know when you’re craving a sweet treat but you’re trying to be healthy? Yeah, me too.

Which is why I concocted a homemade treat that’s yummy, hits the spot, and is healthy.

Wait, what? Is that possible! Yes it is. Allow me to introduce Peanut Butter Banana Ice Cream in the Vitamix.

Here’s why it’s yummy: peanut butter, cocoa powder (aka chocolate), and vanilla (which makes everything taste better).

Here’s why it’s healthy: bananas (aka fruit), no added sugar.

First, make sure your bananas are going brown. Then slice and freeze them. Tip: flash freeze your bananas by slicing them in rounds, then laying on a baking sheet lined with parchment paper. Once they are frozen, dump into a zippered bag and never wonder if your frozen bananas will be stuck together.

All you need is a few minutes to throw this dessert together. Add all of the ingredients to the blender. Gradually turn the machine to high, using the tamper to press the bananas into the blade. Add more milk if necessary. I definitely needed more milk to help everything get sucked down into the blades.

Once it’s blended and four mounds form in the Vitamix container, turn off the blender and enjoy immediately. 

If you can’t indulge in all of that creamy richness in one sitting, store the leftovers in the freezer. Allow to sit at room temperature for a few minutes before enjoying round two.

Peanut Butter Banana Ice Cream

A healthy and delightful peanut butter ice cream that is beyond simple: dump ingredients, blend in Vitamix, enjoy.

Cook Time: 1 minute
Total Time: 6 minutes

Ingredients

  • 4 frozen bananas
  • ¼ cup peanut butter
  • ⅓ cup cocoa powder
  • ½ cup milk
  • ¼ tsp vanilla extract
  • ⅛ tsp salt

Instructions

  1. Add all ingredients to Vitamix blender container. 
  2. Start blending on low. Using the tamper, press ingredients down into blade. 
  3. Once blended, run on high for 30 seconds until four mounds form.
  4. Enjoy immediately or store in freezer
