Pumpkin Smoothie

With a high fiber content and low calorie count, pumpkin is a nutritional powerhouse. It has twice the recommended daily intake of Vitamin A and high levels of beta-carotene and other antioxidants. When you blend the squash with coconut milk for some additional heart-healthy fats, you’ve got the perfect fall smoothie.

Cook Time: 2 minutes
Total Time: 4 minutes

Ingredients

  • ¾ cup canned pumpkin
  • ½ frozen banana
  • ⅓ cup coconut milk
  • ⅔ cup ice
  • 2 tsp molasses
  • 2 tsp whey protein

Instructions

  1. Add all ingredients to blender
  2. Turn blender on
  3. Blend on high until smooth and creamy
  4. *If you have a blender with Preset Settings like a Vitamix or Blendtec, use the "Smoothie" Preset
  5. Add in some pumpkin pie spice, or your own mix of cinnamon, ginger, nutmeg, and even ground pepper for a fall kick.

  • For a dairy-free alternative, consider a vegan protein. Try one of these protein sources for an extra boost to round out your smoothie and make it a true meal replacement.
