Watermelon Spritz

An iconic picture of Summer is a triangular watermelon slice, complete with a rich green rind and polka dotted with shiny black seeds. And watermelon is perfect for consuming during the hot season since it’s more than 90% water.

Seeded melons tend to boast more flavor, but there is an afforded convenience with seedless melons. It’s a refreshing summer treat, no matter which kind you prefer.

Not to mention the fun of seed-spitting contents, the sticky drips of juice down your chin, and gnawing on the crisp rind. Nonetheless, this fruit can be enjoyed in other ways, including an alcoholic Watermelon Spritz.

First, de-seed the melon. It doesn’t matter how much you butcher it to remove all of the black and white dots – it will all be chopped up in the blender anyway. (Therefore, don’t freak out about missing a seed or two.)

Toss approximately 5 cups of watermelon chunks into your Vitamix blender cup. Helpful hint: use the measurement markings on the side of the blender cup.

Pour in the rum, and blend for 30 seconds. It should splash all over the container as the melon is pureed.

Now, pour the pink liquid into a wine glass, filling it about halfway full. Add 2 ounces of a lemon-lime soda to your glass and gently stir. If desired, place a watermelon slice onto the rim of the glass.

Enjoy your homemade Watermelon Spritz – it will give you a slight kick with the alcohol and keep your body hydrated, all while tasting like Summer!
