Freshly Ground Walnuts Made Quick With A Vitamix

Are you nuts for nuts? Peanuts, almonds, pecans, cashews, Brazil nuts, and pistachios are excellent options for a healthy snack. But today we’re going to focus on walnuts.

I’m preparing a batch of Tomato Basil Soup for dinner and couldn’t resist adding some chopped walnuts into the mixture for added protein and additional flavor. To be fair, the credit for this idea goes to one of my friends who enjoys cooking up new creations as much as I do. We had dinner at their house and she mentioned that she added chopped nuts into her tomato soup recipe. It was such a good idea that I had to try it myself! As you can imagine, it’s still tasty.

Walnuts are an a great source of nutrition. A half cup of walnuts contains approximately 9 grams of protein, 4 grams of fiber, plus polyunsaturated fat (the “good” kind of fat). They also provide small amounts of various vitamins and minerals, such as potassium and folate.

As long as you have a high powered blender, you can chop up a batch of walnuts. I tossed a half cup of walnuts into my Vitamix blender cup (the standard cup, not the dry container) and ran it on high for about twenty seconds. I scraped down the sides of the container and scooped out the contents into my soup. They were so tasty that I’m already planning to chop more as a salad topping!
