When tomatoes are in season, they are abundant and plentiful. Which means salad can be a nightly side dish at the dinner table.
But simple lettuce and dressing can become boring, which is when I make a fresh Green salad with homemade Greek dressing.
First, the lettuce. I find a colorful mix of lettuce the best for visual appeal and taste. Spinach, romaine, and head lettuce are the perfect blend. A Spring mix goes well with this dressing too.
Next, the topping. Greek salads are not complete until there is a generous sprinkle of crumbled feta cheese and fresh olives. Sliced tomatoes and cucumbers bring juicy flavors, while the red onions provide a slight bite. Croutons and fresh mozzarella cheese are always a good idea, but not a requirement.
Lastly, the Greek dressing. I pour generous amounts of extra virgin olive oil and vinegar into the Vitamix Aer container. Select the vinegar of your choice; my favorite: red wine vinegar. Next, dump in your herbs and spices. Don’t forget the secret ingredient that adds a load of flavor: dijon mustard. If you don’t add mustard, you will notice a little something is missing. Whirl it in the blender for 30 seconds to completely emulsify the oil and vinegar together with the herbs.
- ¾ cup extra virgin olive oil
- ½ cup vinegar, balsamic, red wine, or white wine
- 2 tsp garlic powder
- 2 tsp oregano
- 2 tsp basil
- 1½ tsp pepper
- 1½ tsp salt
- 1½ tsp onion powder
- 1½ tsp dijon mustard
- Place all ingredients in the Vitamix Aer container.
- Run on medium for 30 seconds until all ingredients are combined.
Serve over a fresh Greek salad. Store extra in a jar in the fridge.
