Pineapple Lemonade The Easy Way

The Spring weather is constantly a tease. It looks dreadingly hot outside the window, yet the air is warm and the wind is cool. It makes me long for the heat of summer, and grieve the loss of a refreshing Spring.

On these days, when I’m stranded between two seasons and can’t decide which I prefer, I blend the two in the kitchen. This pineapple lemonade bears the fruit of Spring with the quench of a Summertime lemonade!

It takes longer to cut up the fresh pineapple than it does to make this foamy drink. Not sure how to chop up a beastly pineapple? Dole has an excellent guide:

  1. Twist off the top.
  2. Cut into quarters (lengthwise).
  3. Core it (slice off the hard inner section) and cut off the skin.
  4. Slice into cubes.

Fun tip: While you’re slicing up a pineapple, you (or your kids) can knaw on the hard inner core. It still has flavor and juice, but the thick grains are too tough to chew. This is perfect for a teething toddler; but be warned, it can get messy and pineapple juice is sticky!

Toss those fresh pineapple cubes into your Vitamix cup along with some ice and water. Juice 2 fresh lemons into the cup as well. I always place a small mesh strainer over the Vitamix container to catch the lemon seeds or large chunks of pulp.

Pineapple Lemonade

A frothy lemonade packed with the flavors of pineapple and topped with a layer of bubbly foam.


  • 1 pineapple, diced
  • 2 lemons, juiced
  • 1 cup water
  • ½ cup ice


  1. Blend the pineapple, ice, water, and fresh lemon juice in the standard Vitamix cup on high until the pineapple is pureed, about 30 seconds. Serve chilled.
  2. Optional: You can juice the lemons in the Vitamix Aer Disc container! Cut off the ends of the lemons, slice each lemon into four equal rounds, then add to Aer container with water (see recipe). Run for 30 seconds on high. Strain out pulp and seeds, then combine with the fresh pineapple and ice in the standard Vitamix cup. Blend for 30 seconds until the pineapple is pureed.

Turn on the machine and run for 30 second to one minute. It will be foamy on top, which tastes delicious! Pour into a pitcher and serve chilled. It pairs well with Asian flavored dishes (think soy sauce or Dale’s marinade), fresh fruit, and ice cream.
