Lemon balm is a member of the mint family, which means it’s easy to grow and very flavorful! It’s a hardy green leaf that exhibits a lemony scent and an earthy texture. It’s known to calm anxiety, help get rid of cold sores, and lessen insomnia.
You can toss this into a salad, or chop it up as a herb coating for chicken, or make it into a fresh tea. It tastes delicious as a hot or cold tea, so you can make this at any time of the year. (Which means you can dry out your fresh leaves to use as a tea in the colder months). Don’t forget to add a small spoonful of honey to your mug as well!
You may be thinking that it’s complicated to use fresh leaves to make tea. But your Vitamix Aer Disc container makes it even easier! Using the markings on the side of the container, measure 1.5 cups of water. Add about ¼ cup of fresh lemon balm leaves, breaking each roughly in half to release the oils.
- ¼ cup fresh lemon balm leaves, roughly chopped
- 1 cup water
- 1 tsp honey, optional
- Add the roughly chopped lemon balm leaves and water to a Vitamix Aer Disc container.
- Run on high for 3-4 minutes, until hot.
- Strain out leaves. Add honey if desired. Drink warm!

Run your blender with the Aer Disc container for 4-5 minutes, until the liquid is hot. Strain over a mug, and enjoy a cup of warm tea with a dollop of fresh honey! To drink cold, allow to cool in the fridge or add a few ice cubes to your glass.
