This quick and easy salsa recipe has a rich, smoky flavor from the roasted ingredients and a perfect texture from the blender. It’s a great way to use those fresh, summer vegetables.
Ingredients
- Medium tomatoes – 4
- Red onion – 1/2
- Jalapenos – 2
- Red bell peppers – 1
- Corn – 1 ear
- Garlic – 1 clove
- Lime – 1
- Cilantro – 1/2 bunch
Instructions
- Roast all tomatoes, onion, jalapenos, bell peppers, and corn over high heat until skins are slightly charred
- Allow ingredients to cool slightly in covered bowl
- Remove skin from tomatoes and peppers
- Add tomatoes, peppers, onion, and garlic to blender
- Place cover on container and blend on high for 10-15 seconds until ingredients are roughly chopped
- Cut corn kernels from ear and add to blender
- Add juice from lime, garlic, and cilantro to blender
- Pulse machine several times to chop remaining ingredients and combine
- Chill in refrigerator until ready to serve
